Great in a marinade, mixed in drinks, salsa & in salads. It goes hand in hand with cilantro & adds sort of a Caribbean flare to cooking. Here is a whole page of lime recipes.

BBQ corn on the cobs...take off and drizzle soy sauce as well as a large squeeze of lime...Absolutely Delicious.

Apart from the usual uses as suggested in answers so far, a spicy or sweet pickle or chutney is great.

Its great in stirfries, especially Thai food (eg penang curry).
Its also used in marinades and condiments...again lots of curries and chutneys etc.
