Probably because "iest" is a far more common set of letters in general...

They are spelling it phonetically, meaning they are spelling it how it sounds.
I admit I used to write it like that before computers had the spell-check installed.

I before E accept after C was implanted into their brains. Also a lack of using spell check.

atheist - is the correct spelling, some people confuse the i before E and can't use spellchecker.
