I mean how long does it usually take to strip parts off a bike and and transfer them to a new mtb frame? At a bike shop. What is the average amount of time? Or days?Any ideas

It all depends on the skill of the mechanic as well as the shape of the components. As much as mechanics don't like to admit it, it is easier to work on good stuff that is clean and well maintained. Good parts fit together like a a jigsaw puzzle. That being said, I would say anywhere from three to five hours. I'm a little anal and when doing a full transfer, I take my time to fully degrease, clean, and refurbish components. If you're taking everything off, you might as well do it right.

If all your parts are in and there isn't anything to distract your mechanic he could swap out your entire set-up in three to five hours. Most bike shops say 3 to 7 days to allow for distratcions, emergencies and parts that don't quite want to go together or come apart.
