I'm cooking two, and they are seeming to take forever!

If the bottom (between stem and leaves) pierces easily and releases easily w/ a fork, they're done.

Artichokes typically take 45 min or so just to steam. If you are cooking them w/ another method, you can count on close to an hour.

I assume you are talking about globe artichokes, the round green things. If so, they are done when the leaves come off and you can stick a fork into the stem with about the same resistance as a cooked carrot.

If you are cooking Jerusalem artichokes (root veg a bit like potatoes), stick them with a fork - the resistance should be like cooked potatoes!

this is how i cook my artichokes. peel hard skin until eadible peice is reveiled then i trim it up n quarter it, quickly fry them ad then throw in half a bottle of white wine to 20 artichokes and corriander seeds. it will take 40mins roughly, stick a knife in them and when the knive goes through like it would with butter then they are perfect

Try to peel of a leaf from the bottom. It it comes easily, it's done. You can then bite the tip of it to make sure
