This recipe is authentic and awesome. If youa re going to try to sub ingredients to reduce the fat, then dont' bother making it.

Real Fettucine Alredo

1 pound fresh fettucine (dry ok, just boil longer)
8 Tbsp. butter
1 cup heavy cream
1 cup freshly grated Parmigginao-Reggiano cheese
Freshly ground black pepper, to taste
Freshly grated nutmeg

As the water for the pasta begins to boil, melt butter in large sauté pan over low heat. Add cream to butter and let it warm.

At the same time, salt the pasta water and cook until al dente. Drain pasta thoroughly, and mix with butter and cream in sauté pan over low heat. Add cheese and toss until sauce thickens slightly. Season with pepper and nutmeg.

Remove from heat and serve immediately with additional cheese on the side.

Serves 4-6

Alfredo Sauce Recipe

Ingredients:
1/2 cup sweet butter, melted
1 cup heavy cream, warmed
3/4 cup freshly grated Parmesan cheese
Salt to taste
1/4 teaspoon freshly ground pepper
8 ounces Fettuccini or Angel Hair, cooked
3/4 pound cooked shrimp or chicken (optional)


Directions:

Mix first 5 ingredients. Pour over warm pasta. Add shrimp and toss to coat. Serve immediately.

This recipe for Alfredo Sauce serves/makes 4

ALFREDO SAUCE

1/2 cup cream cheese
1 cup milk 0-2 %
3 tbsp freshly grated Parmesan cheese
1 clove of garlic
1 tbsp pepper
1/2 tsp salt
3 tbsp dry parsley/ 1/2 cup fresh

The best way to make this consistent is to use a blender, put cream cheese, milk, Parmesan, cheese, garlic, pepper and salt in blender. Blend until there are no clumps, poor into sauce pan on medium heat, cook for about 10 minutes, well cooking add parsley, is fresh chop finely and extra for garnish.

Cook your favorite pasta, I recommend spaghetti, if you want you may want to add chicken bacon any one of your favorite meats, I find it goes great with clams.

Pour desired amount over pasta, cook meat in sauce to absorb flavour into the meat, cook sea food in different pan and than add over pasta before pouring Alfredo Sauce.

If you find the original sauce using heavy cream and butter to be too heavy, then this modified, lighter version may be a healthier choice for you.

Alfredo Sauce

1 8oz pkg crem cheese
1 stick of butter
freshly grated Parmesan cheese
milk

IN a small saucepan, melt cream cheese over med-low heat. Add butter and melt. Stir in cheese until flavored to your taste. Add milk until creamy. You may add shrimp, vegetables or just serve over noodles.
