Seems that a jar of something pickled should be good for a very long time, but I like to be careful. Can sauerkraut go sauer?

I don't think there is anything in kraut to support bacterial growth. It was kept at rom temp (and probably still is) in "the old country" for months.

I'd say 6 mos in your fridge is about the best to expect. After that, it may lose flavor or texture and while safe to eat, probably isn't the best it could have been.

If you are feeding directly from the jar you must throw away the leftovers, but if you are scooping out a bit in a dish you can save what is left in the jar for 2-3 days, it actually says that on some labels. Just keep trying eventually the baby will like the foods.

And what happens to sour cream when it goes bad, huh?
LOL! I've had sauerkraut in the 'fridge for over a year and it's fine although it's a little soggy. I'm fine. Eat it and don't worry about it; the bacteria that made it sour also protect it!
