The flesh oxidizes as it comes into contact w/ the air. To stop this, wash any cut surfaces of your apple in something containing vitamin C: lemon juice, P/A juice, OJ, etc.

Because it's decomposing. if you don't want sliced apple's to turn brown, try putting them in some lemon juice or lime juice, prefferably lemon juice.
