Mango and Lime
3lbs ripe Mangoes peeled and coarsely chopped
2 tablespoons fresh lime zest, finely grated
1/4 cup fresh lime juice
1 teaspoon fresh lemon juice
2 1/2 tablespoons powdered fruit pectin
3 cups sugar
Method
1. Combine mangoes, lime zest, lime juice, lemon juice, and pectin in a large pan
2. Mash, using a potato masher until well blended.
3. It can be a little chunky, but really try to crush everything together well.
4. Cook over HIGH heat 4-5 minutes, or until the mixture come to a rolling boil, stirring the entire time.
5. When jam is boiling and you can't stir it down, gradually add sugar- stirring the whole time.
6. Return to a full boil over high heat and cook 2 minutes exactly, stirring occasionally.
7. Remove from heat.
8. Ladle into hot, sterilized canning jars and seal
9. Flip upside down and let rest 5 minutes on their lids.
10. Return to upright position and let cool.
11. Store in refrigerator,unopened,up to 6 months or in freezer.
12. Once opened, use up in several weeks.

Haven't eaten jam for years because I worry about my teeth. I remember buying some stuff in Scotland that looked like marmite but was supposed to be some sort of sugar-free fruit extract. I don't miss jam, but I sometimes think of buying fruit spread then decide against it because of the "natural" sugar content. I would like a banana spread that was sweetened with natural juices.

Toe Jam
That grey-brown **** that accumulates between your toes. Primarily composed of dead skin cells, sock fluff and sweat.

You want to try something really great, make Fig Strawberry Jam.......
8 cups crushed figs....3 cups sugar..two smallpackages strawberry Jello.
Bring to a boil and cook 3 minutes, cool and put in freezer bags. and one jar for the refrigerator...Nuf Said

My mother liked those things, she would buy "Apple Butter", and "mint jelly", and little tiny country jam's packed in a little tiny jar, about enough to hold a tablespoon's worth, the lid's had a small piece of "Gingham" tied aroud the lid, she would buy them at a little farm stand, nobody else liked them at home but, mom, she would always offer me some as a child, smile before she ate it and say "I love these things", I get all "teary eyed" remembering.

I love tayberry jam and also logan berry jam! my nan used to make tayberry jam when i was a kid and i hav been addicted ever since but it is rare that i find a jar anywhere!

I have a ginger-lime jelly I got in Hawaii and some Lingonberry preserves imported from Sweden.
My favorite is any kind of marmalade.
