Shred it and put it with either BBQ sauce or sloppy joe mix. Find some potato buns, and poof, pulled pork (loose meat) sandwiches.

Heres a great blue cheese sauce for pork chops:
1 cup whipping cream
2 ounces blue cheese, crumbled
Stir the whipping cream into the skillet, add a few bits of meat from the chops. Stir in blue cheese. Cook, stirring constantly until sauce thickens, about 5 minutes. Pour sauce over warm pork chops.
A really good mushroom sauce:
1 clove garlic, pressed
1 (8 ounce) can mushrooms, drained
1 cup dry sherry
1 (10.5 ounce) can beef broth
1 tsp flour
Pour the mushrooms into the skillet with the pork bits and garlic, and stir in the sherry and beef broth, scraping any bits of pork that are stuck to the pan. Bring to a boil, add a little flour if necessary to thicken. Cook for 1 min then pour over the pork chops. Cover with a lid, or aluminum foil.

Take a fork & pierce chops all over. Sprinkle 1 pkg Lipton onion soup mix & just enough water to almost cover. Cover dish w/foil & heat @ 300 for about 30 minutes or til most of the soup is absorbed.....they turn out juicy every time!

Heat up a can of crushed tomatoes, or tomato puree in a frying pan, add a little salt, pepper, dry basil leaves, pinch of oregano, some garlic powder...stir, put in the chops, cover, and simmer on medium heat until you smell something wonderful. (maybe 20 minutes) Turn them over and check with fork, if it goes in easily, cover and simmer for just a few minutes more. If fork doesn't go in easily, simmer til it does. (it should be done, tho)
Serve with pasta or rice and a veggie.

make a sauce out of tinned apricots and cornflour. it will rehydrate the chops a little. pork and apricots go well.
