Pan Fried Asparagus
* 1/4 cup butter
* 2 tablespoons olive oil
* 1 teaspoon coarse salt
* 1/4 teaspoon ground black pepper
* 3 cloves garlic, minced
* 1/2 pound fresh asparagus spears, trimmed
DIRECTIONS
1. Melt butter in a skillet over medium-high heat. Stir in the olive oil, salt, and pepper. Cook garlic in butter for a minute, but do not brown. Add asparagus, and cook for 10 minutes, turning asparagus to ensure even cooking.

Asparagus with Balsamic Butter Sauce
* 1 bunch fresh asparagus, trimmed
* cooking spray
* salt and pepper to taste
* 2 tablespoons butter
* 1 tablespoon soy sauce
* 1 teaspoon balsamic vinegar
DIRECTIONS
1. Preheat oven to 400 degrees F (200 degrees C).
2. Arrange the asparagus on a baking sheet. Coat with cooking spray, and season with salt and pepper.
3. Bake asparagus 12 minutes in the preheated oven, or until tender.
4. Melt the butter in a saucepan over medium heat. Remove from heat, and stir in soy sauce and balsamic vinegar. Pour over the baked asparagus to serve.

Sauteed Garlic Asparagus
* 3 tablespoons butter or margarine
* 1 bunch fresh asparagus
* 3 cloves garlic, chopped
DIRECTIONS
1. Melt the butter or margarine in a large skillet over medium-high heat. Add the garlic and asparagus spears; cover and cook for 10 minutes, stirring occasionally, or until asparagus is tender. If you like your asparagus well done, reduce heat and cook an additional 10 minutes.

1 bunch asparagus
1/2 stick butter
4 cloves garlic minced (you an use store bought if you want)
Salt & pepper
Chop bitter ends off of asparagus & discard. Place asparagus tips in a 10"-1 foot long piece of aluminum foil.
Add garlic & season with salt & pepper.
Toss with your hands to cover evenly.
Cut butter into small sections & put on top of the asparagus.
Seal aluminum foil to form a pouch.
Put in a 350 degree pre heated oven or on a hot grill.
Let cook for 12-15 minutes.
Remove from heat & let cool for 5 minutes.
Plate up & pour melted butter, garlic, salt & pepper over top & serve. It's delicious, I do this all the time!

Super easy:
Trim, wash and dry the asparagus.
Toss the asparagus in some good extra virgin olive oil and balsamic vinegar and season w/ garlic salt, lemon pepper and some italian seasoning. Grill (Foreman grill, grill pan or on an outdoor grill all work equally for this) for about 4 minutes until they are tender and slightly charred). Just before serving, drizzle a little more balsamic on top.

EASY ASPARAGUS
15 oz. asparagus spears
Sliced mushrooms
Parmesan cheese
Place asparagus spears in shallow pan. Sprinkle with mushrooms and cover with Parmesan cheese. Bake at 350 degrees for 15 or 20 minutes.

I love to do this as a side dish when we are grilling thick cut rib-eyes......Take a good size piece of foil & place on counter. Rinse & snap off tough ends of asparagus. Lay in center of foil, then add a clove or two of minced garlic. Drizzle with italian dressing, then sprinkle w/ salt & pepper. Fold foil to make a pouch, then place on grill, rotating til done - about 20 - 30 minutes.....Yummy!!

1 pound medium asparagus, stalks trimmed and peeled
1 to 2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 lemon, cut into wedges
Pour about 1-inch of water into a large saucepan, and set up a collapsible steamer inside. Bring the water to boil, lay the asparagus in the steamer, cover, and steam until crisp-tender, about 4 to 5 minutes. Transfer asparagus to a heated serving dish, drizzle with the olive oil, and season with salt and pepper, to taste. Garnish with lemon and serve immediately.
Cook's Note: You may finish the asparagus with the grated zest of a small lemon, a tablespoon of unsalted butter, and a teaspoon of minced flat-leaf parsley leaves, instead of the oil.

Rub the stalks with a tiny bit of olive oil, put them on the George Foreman at HIGH for 3 minutes, season with lemon juice, salt and pepper.
OR
Put them in a big pot of boiling water for 3 minutes, remove and season with lemon juice, salt and pepper.

Toss in olive oil, sprinkle with coarse salt and then roast in the oven.
Steam lightly and then toss with fresh garlic, a bit of salt and some butter.
Toss it on the grill after tossing with olive oil and chopped herbs of your choice. (I like tarragon for this.)
