This is incredibly simple and quick, but for some reason everyone I make these for beg for them again...So good luck (great if you have kids too).
Chicken Broccoli Roll Ups
8 10" flour tortillas
1 lb cooked chicken, cubed or shredded
1 can cream of mushroom soup
8 fl oz milk
1 bunch of scallions, sliced thin (whites only)
8 oz shredded cheddar (use the thicker shred)
10 oz frozen chopped broccoli, thawed
1 FRESH tomato, diced and seeded (don't use the canned!)
Whisk soup and milk together. Take out 6 fl oz (3/4 C) and set the rest aside. Mix chicken, scallions, half the cheese, and broccoli into the 6 oz of soup mixture. Spoon about 1/2 to 3/4 C of the mix into each tortilla and roll burrito style (one end open). Place seam size down in a greased 9 x 13 or 5L baking dish. Repeat with remaining tortillas. Don't worry if you underfill them at first, you can always add more filling into the tops of the tortillas when they're in the dish. Stir tomato into reserved soup mix and pour over the top of the wraps. Cover with foil and bake for 30 minutes at 350F. Remove foil, sprinkle remaining cheese on top, put back in the oven for 5 minutes to melt. Can easily be doubled without adding extra cook time. Good luck!

Gosh, there's a bunch. My famous fruit salad (the secret is a can of lichi nuts with heavy syrup poured over the fruit and mixed in), my famous monkey bread (Ok, it's Caprial Pence's recipe but she calls it Orange Caramel Pull Aparts), my famous pesto (proprietary family only recipe), my famous secret treasure cookies (not even mom knows, and she's still pissed about it), my famous pear pie (Caprial Pence strikes again - but I've got a secret *extra* ingredient), my famous pecan/blue cheese turtles (made that one up a few years ago, yummy!), my famous green salad, my famous secret sin beef in marinade, my famous tequila chicken, my famous red and/or green enchiladas...the list just goes on and on...
If you're looking for a recipe, take the fruit salad mentioned above. It's super simple and always a big hit. Whatever fresh fruits you can find (avoid citrus and banana) with the can of lichi nuts and syrup. The women (because it's a guilt free delicious pig out) and kids (because it's sweet and fruity) will especially like it. For new folks who haven't had it before I usually offer a prize to the one who guesses the secret ingredient.

Being a southern girl, it would have to be my homemade potato salad. Take new red potatos & boil til fork tender. Drain, cool, then cut into 4ths. Add a little mayo, spicy mustard, pickle relish & a couple of boiled eggs chopped. Mix just until blended, then chill in fridge til ready to serve.....Yummy!!

Deviled Eggs-
I mix yolks, salt, pepper, mayo, and bacon bits (Real not Bacos) and stuff into the egg whites.
Chinese Cole Slaw-
Cabbage shredded, green onions, oil, vinegar, sugar, salt & pepper. Topped with browned sesame seeds, ramean noodles, and sliced almonds. Interested? make note and I will give exact recipes.

Dessert make a trifle with angel food cake & pudding & cool whip You can even get sugar free everything and make it acceptable for diabetics as well. The new cheesecake pudding and a strawberry pie filling works well with the angel cake

I always bring pasta...
today I'm bringing shrimp scampi with bow tie, vanilla cupcakes swirled in chocolate covered strawberries, tirimisu and cheesecake.
With my other family, I bring potato casserole.

Would you believe Cuttlefish with Pig Stomach. No - OK then you got me - I get asked for desserts (mostly pies) as I am a five star pastry chef.
But Cuttlefish with Pig Stomach is on the menu at any discriminating Chinese Resturant.

Oven Baked BBQ Ribs
Ribs of your choice
Pre heat oven to 275
Place ribs on cookie sheet or pan wrap in foil (easier to clean afterwards)
