I have very sensitive skin and for the shower, I use Dial Mountain Fresh. It doesn't have a noxious scent, and it is classified as a deoderant soap so it gives extra protection (though not in place of an antiperspirant/deoderant). I don't, however, wash my back with soap, but let the water and shampoo soap run down it :) due to my noticing that I am much more itchy on the back when using soap there.
For facial cleaning, I use cetaphil liquid cleanser and it is so gentle for the face. Most dermatologists recommend using cetaphil. And as someone mentioned, perhaps if your itchy, flaky skin continues, talk with a dermatologist.

Soaps from the grocery store are making your skin itchy and flaky because they have fillers and chemicals that are harmful to sensitive skin. Try an all-natural, handmade soap - they don't have artificial ingredients, so they won't irritate your skin.
Good luck!

Anything unscented can prevent any irritations like Dove. There's another I used it is made from goat's milk but I'm not too sure if I would reccomend it for everyone.
I'm currently using Aveeno moisturizing soap bar for dry skin. It is natural (made of oatmeal). You can find this in the cosmetic section along with cleansers/toners/moisturizers, because it was designed for the face... but I still use it on my body and it does help with my itching problem. I have eczema and I would say it works very well. Makes my skin pretty soft too. :)

I have found that Tone or Dove soap work well. My uncle is a dermatologist and that is what he recommended. I also found that body wash doesn't make your skin as itchy as bar soap does. Good luck!

I never use soap. Instead I use Cetaphil, a really good soap alternative. You can use it to cleanse the face, remove makeup, including the eyes and on your entire body. Very cheap $20.00 for 1 litre and it lasts forever. I live in Oz but if you are in the states I'm sure you could get it there too!

Bar soap is soooo over rated. Why not switch to liquid? Bar soap is a bacteria gold mine. Think of the last place you washed with it and the first place you start to wash.... Plus it gets slimy and mushy over time..... If you must use a bar I would suggest Ivory or Dove to be the most mildest.

Your skin is showing signs of dryness and perhaps the ingredients is not suitable.
Check out this marigold soap bar which gives you a feeling of firmness after wash. Do apply a layer of ce cream as moisturizer after cleansing your face. The product is available online and not found in any drug store.

I suggest dove/ivory or the clear bar soap by nutragena-
if your face doesn't like this I do suggest investing in a pure and natural brand - not found at a drug store.
