Sugar is usually "Bleached" so to speak. That's why it is healthier to use "RAW" or Cane Sugar. They are also more Flavorful !!!!

Raw sugar is a coarse, brown, sticky variety made by simply boiling down whole cane juice and it too is a wholesome food.
Milling white sugar, consists of raw sugar where the production process does not remove coloured impurities, but rather bleaches them white by exposure to sulphur dioxide.
The bleach makes them white.

Because all the "impurities," a.k.a. molasses, has been removed. Brown sugar is white sugar with molasses added back in, but it used to be unprocessed sugar. Take a look at the brown sugar packets at Starbucks: Sugar In The Raw!!

It's original color is brown, and comes from sugar canes. The sugar is processed, and then, for a once higher social class, has been bleached to cater to that once, and now demanding group of citizens and customer, that only will use this product, stripped of it's original color, and natural molasses taste and luster.

Pure sugar is colorless - like lots of other things. Break anything colorless up into lots of little solid pieces, and it reflects light back at you without absorbing any - so it looks white. (example: water is colorless, but snow is white).

It's not naturally,it's brown.Sugar is refined to make it white.The reason I think is that it will not discolour things it is put in or mixed with.
