I make a simple punch that everyone always seem to love. You mix two liters of Hawaiian punch, two liters of 7up or Sprite and some rainbow sherbet. I freeze green & red cherries in a mold with water and put into the punch. Tastes great and looks wonderful.

It depends on the festivity, but just about any berry freezes well. For a 4th of July party, I froze raspberries and blueberries in ice cubes, tasted great in lemonade. If you are making tea, you could freeze rindless lemon or other citrus. Any leaf from the mint family freezes nicely.
I have seen small flowers frozen in ice cubes, very pretty.

5. Use food coloring to make regular ice cubes different colors.

For Halloween, plastic flies are GREAT! You can buy ice cube trays in shapes like jewels, and you could dye the water or use juice or something.

Try lemon aid or pineapple juice in a festive drink as they melt you can still have a good taste.

Pineapple juice with sliced maraschino cherries is excellent.
sliced strawberries is also good.
You have lots of other good suggestions that I don't want to duplicate, but those two are my favorites.
Mint is great also.
