I think it's just fashion because to me it's a horrible slippery slimy sameness.
Be honest! If your feeling a bit queasy do you really want another plate of slippery pasta with some horrible sauce?

Either you've never had GOOD Italian food, or you just don't appreciate it.

So WHAT if it's slippery. So are oysters!
All the Italian food I've had has GREAT sauce. I have tasted sauces that were not as good, but there's a LOT of WONDERFUL Italian food and it has good variety.

I feel sorry for you if you believe it's all "horrible slippery slimy sameness" because you just don't have a good appreciation of this excellent food.

It's so highly rated because it is SOoooo GOOD!

Because it's basic and hearty. Don't get me wrong, it can be masterfully prepared, but it is common food and tastes delicious. Even gourmet Italian meals are reminiscent of those that would be made at home. It fills you up and tastes so good. It's also usually not very expensive, and the recipes can be changed to add your own flavor to it.

It's not all about pasta and sauce. It's manicotti shells stuffed with ricotta cheese...lasagna...pizza. It's braised lamb. It's bread soaked in stew and set in the frige over night and boiled again so everything mixes together. It's so many different kinds of bread. So much use of delicious sea food. And gelato is the creamiest ice cream I've ever had. If horrible spaghetti is the only Italian food you've tasted, you need to go to better restaurants or make Italian friends.

The slippery pasta with a horrible sauce is probably made by your mama. I'll take the authentic Italian food made in Italy....and it's damn good!

I'm Italian and obviously I'm too one-sided to answer yr question. However I guess you've never been here in Italy and tasted locally our real cooking.
I respect your judgement but if you're basing it exclusively for having eated in some "italian restaurant" outside of Italy please suspend it until you have the opportunity to enjoy it on its natural site, here in Italy.
I've travelled a lot in my life and just once, really a longtime ago, I did the mistake of going to an "italian restaurant" outside of Italy. I neither recognized the food I had ordered and I didn't eat after having tried it.
I'm writing "italian restaurant" in inverted commas since the ones abroad don't deserve to be called as those one here in Italy that are the real ITALIAN RESTAUANTS (In capitals...!!)
I'm sure that after eating our food here you'll stop thinking at it like "a horrible slippery slimy sameness".

Because all things Italian are good and have been for centuries...
Seriously it sounds like you have had a bad experience. If you want REAL Italian food go to a small mom and pop store in your area run by Italians and I'm sure you will change your mind. Tell them what you like and they should suggest something on the menu. If its real old world they will probably make you something just for you...

Italian food is all about warm, saucy, comfort food. If you don't like what you have been eating then you need to find a sauce you really love....nothing better on a bitter cold day than a big pan of cheesy, meaty, saucy lasagna.
