Italian Style:
salt 1 3/4tsp
pepper 3/4
rosemary leaves 1-3 tsp
sage1/4 tsp
minced garlic 1/4 tsp
flour 2 1/2 TB
wine vinegar 1/2 to 1 cup (or just wine)
- I make Rosemary wine to do my lamb
water 1/2 to 1 cup
Kitchen Bouquet - 1 tsp

Cook 10 - 15 min @ 500F, Mix & rub with dry ingredients then reduce heat to 325F and cover with foil to cook about 3.5 hours. Use kitchen bouquet at the end to flavor gravy.

Greek Lamb Recipe:
garlic powder to taste
salt 1.5 tsp
pepper 1/2 tsp
oregano leaves - 3 tsp
olive oil - 1/2 cup
fresh lemon juice -OR-
juice from kosher dills - 2-4 TB

Wipe lamb. make 1/2" slits 2" and fill with garlic powder. Rub other dry ingredients in a mix over lamb. drizzle oil over lamb, then the lemon or dill juice.

Put lamb on rack in shallow pan. cook uncovered slowly at 325F about 3 to 4 hours.

Make gravy from pan drippings.

I fed both these to a husband who claimed to HATE lamb and he LOVED these roasts for years!

deifinitely with vinegar, cuz i heard this is what makes the meat soft! I usually make it with tomato paste, oregano, salt, dill, (and at times with sazon seasoning). It's always good to marinate overnight, or 4-5 hours. But if you're in a hurry, you can punch holes to the meat with a fork and then rub with the rubbing ingredient so that it'll absorb quicker.Hope that helps....
