I'm looking for something more than emptying a box and baking, just not something that is going to take forever.

This is "rizogolo"--Greek Rice Pudding witj Cinnamon.
Dead easy, portable, and you can make it in batches. Goes with everything and you can add fruit, etc. to make it special.
Add whipped cream if you want also...

Europa--Greece--Greek Rice Pudding (Rizogolo)


Ingredients:


2 quarts of whole milk (preferably)
1/2 cup Mahatma or other good quality white rice
1 cup sugar
1 teaspoon vanilla
e eggs
cinnamon, for garnish


Preparation:


Bring milk to a boil for approximately five minutes. If a
skin form on the top, break it up by stirring back into milk.

Add rice and stir.

Lower heat and continue on simmer for 45 minutes, stirring.

Add sugar and vanilla and stir for 15 minutes more.

Shut off hut; leave the pot on its burner.

Whip the eggs in a blender or thoroughly by hand with a fork
until smooth.

Then, very carefully and slowly, use a hand beater and whip
the rice mixture for about one minute, not overlong.
(Alternatively do eggs in blender and fill blender 3/4 full
of hot rice mixture before whipping for about 30 seconds.
If second method is used, add whipped mixture back into the
pot.

Stir well in either case to mix thoroughly.

Pour into a large bowl and refrigerate overnight.

Sprinkle with cinnamon at the time you serve this dish.


Serves eight

Serving Suggestions:
This traditional dish is thicker and heavier than the usual
rice pudding. It may be served with a sweeter ice cream such
as French vanilla, mint chocolate, or a lemon sauce. This
accompanies well with darker fruit also such as mature
bananas, ripe apricots, cherries, canned pears, kiwis or ripe
melon with grapes.

Strawberry Shortcake is pretty easy. Instead of buying those pre-made cakes you can make shortcake biscuits with Bisquick or even make a homemade pound cake. Yum!

Rachel Ray has some pretty quick yummy desserts too. You might want to check out her website. Ohhh....I was just watching Semi-Homade Cooking with Sandra Lee and she was making an Apple Raisin Betty. Check it out!

Butter flavored cooking spray
2 (21-ounce) cans apple pie filling (recommended: Comstock)
1 teaspoon ground cinnamon
3 packets instant oatmeal with raisins and spice, divided (recommended: Quaker Oats)
6 tablespoons butter, divided

Preheat oven to 375 degrees F. Spray a 9 by 13-inch casserole dish with butter flavored cooking spray.
Spread half of the apple pie filling in the bottom of the casserole dish. Sprinkle with the cinnamon and 1 1/2 packets of oatmeal. Dot with half the butter. Repeat with remaining ingredients.

Cover with foil and bake for about 1 hour. Remove from oven and let sit for 5 minutes before serving.

Rice pudding of course,
(nothing quick ever turn out right!)
do you like rice? well it really doesn't matter because the taste isn't that of rice anyways.

serving of more than 6 people: pan of cooked rice place in fridge for about three hours till really stiff, not wet but dry.
put in a bowl, add:
*cup 1/2 milk
*Suger /two to four cups.
*three whites of an egg
*raisins if you'd prefer for zest!
*vanilla extract for taste and color
* a little cinnamin for zip!!
mix together, place in any type of cooking pan even a big pot
you know like a chilli pot, place in oven, bake for a length of 1 1/2 hours or untill top turn light brown..

when done, let sit to help stiffen even more...
this is just one way to make rice pudding, taste good warm, but even better cold. if you used a flat pan, take a knife and slice it when serving, in a pot take a big spoon and dip.

DEEP DISH BROWNIE

¾ cup butter OR margarine, melted
1-½ cups sugar
1-½ teaspooons vanilla
3 eggs
¾ cup unsifted all purpose flour
½ cup Hershey’s cocoa
½ teaspoon baking powder
½ teaspoon salt

Blend melted butter OR margarine, sugar and vanilla in a medium bowl. Add eggs; beat well with spoon. Combine flour, cocoa, baking powder, and salt; gradually add to egg mixture until well-blended. Spread in greased 8-inch square pan. Bake at 350 for 40 to 45 minutes OR until brownie begins to pull away from edges of pan. Cool; cut into squares. YIELD: 1-½ dozen

I have a few suggestions... I have tried all of these recipes and they all DELICIOUS!!


*Easy Rice Pudding
1/2 lb white rice (uncooked)
1 1/2 cups sugar
1/4 cup butter
1 pinch salt
1/2 gallon skim milk

Wash rice;drain.
Add all ingredients together in a large saucepot;bring to a boil.
Turn heat to low and cook until thickened (about an hour and a half to 2 hours) stirring often.
Pour into large bowl and sprinkle with cinnamon and sugar.
Serve warm or chilled.


*Mini Cheesecakes

2 (8 ounce) packages cream cheese
3/4 cup sugar
2 eggs
1 teaspoon lemon juice
1 teaspoon vanilla
12 vanilla wafers
1 (21 ounce) can cherry pie filling

Mix softened cream cheese, sugar, eggs, lemon juice and vanilla in bowl.
Place wafer in bottom of each of 12 cupcake papers (in cupcake tin).
Spoon in cream cheese mixture 3/4 full.
Bake in 375 degree oven for 15 minutes.
Let cool.
Top each with cherry pie filling and refrigerate for 1 hour or more.


*Bread Pudding...the sauce is optional, it tastes great either way!

6 slices dry bread
2 tablespoons butter, melted
1/2 cup raisins (optional)
4 eggs, beaten
2 cups milk
3/4 cup sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla

Whiskey Sauce Recipe
1/2 cup butter
1/2 cup sugar
1/2 cup half-and-half or coffee cream
1/4 cup whiskey

Preheat oven to 350 degrees.
Break bread into small pieces into an 8 inch square baking pan.
Drizzle melted butter over bread.
Sprinkle with Raisins, if desired.
In a medium mixing bowl, combine eggs, milk, sugar, cinnamon and vanilla.
Beat untill well mixed.
Pour mixture over bread, and lightly push down with a fork until bread is covered and soaking up the egg mixture.
Bake 45 minutes, or until the top springs back when lightly tapped.
I like to serve it with a whiskey Sauce: Cook together for just a few minutes!


and last but not least Creamcheese Pound Cake
(so easy to put together and tastes so delicious served with strawberries and whipped cream!)

1 1/2 cups butter
1 (8 ounce) package cream cheese, softened
3 cups sugar
6 eggs
3 cups flour
1 teaspoon vanilla

Preheat oven to 300°F.
Cream butter, cream cheese and sugar together.
Add eggs one at a time.
Add vanilla and then flour slowly.
Pour into a bundt pan or Tube pan.
Bake for 1 1/2 hours.
IMPORTANT: Do not try and rush by cooking faster in a hotter oven.

Coconut cake

Make or buy an angel food cake.
Frost with canned vanilla or a homemade vanilla frosting of your choice.
While frosting is still wet, pat coconut over the entire cake.

I made this for Easter this year and I made a homemade marshmallow frosting. It is really good.

Have you got children? They may like the idea of Coconut Cream eggs?
