Wouldn't the dump be so big to clog the toilet?

I am not a doctor, but I would think this is unhealthy. You're holding wastes for up to a week. If there's anything carcinogenic or toxic there, it exposes your body to that substance for much longer.
First - be sure you're drinking lots of water. The usual requirement is is 8 cups per day.
Then try eating 2 pieces of fruit a day if possible. If that's not allowed, go with a psyllium husk laxative. There's no food value there, so you won't affect your diet. Look for the sugarfree version.
If you can't find that, the next resort would be a laxative like Exlax.

I would say that's very unhealthy. Drink loads of water every day and eat loads of fruit.
Buy oranges, apples, dates, plums & strawberries, and anything else you fancy.
Eat a plate of fruit every morning - an orange, an apple, handful of dates, a plum, 3-4 strawberries and you should see improvements within 24 hours.
If crap is sitting in your intestine for so long then the toxins are going to start getting re-absorbed into your system. Fruits & vegetables are the key to a healthy diet, they act as preventative medicine too.
Also, sweetcorn with your meals if you cook or have cooked meals at home would be extremely beneficial - buy bags of pre-chopped stuff which boils in about 5 mins. It's tasty & healthy and will have you crapping regularly.

Not to remove your bowels is very dangerous and unhealthy. Just imagine a rubbish chute that gets choked up with 7 days of waste. What do you think happens? It starts to attract all kinds of bacteria and insects, starts to smell and it does not look good.
Using the same analogy, you may end up sick as your immune system breaks down and start to show symptoms like skin problems and smell.
You are obviously suffering from severe constipation now. You need to eat more fiber and drink plenty of water. Try upping your intake of raw vegetables and fruits and for a meal or two, skip the meats. Give your body time to digest the food and work the toxins out!

It is very unhealthy if it continues long-term. The number one cause of constipation is simply lack of fibre in the diet. You say you recently changed your diet, though you say you've not been regular in the past. I would add fibre to your diet, either as psyllium husk powder (very little calories), or as fruit (if you're not on a GI type diet) first thing when you wake up in the morning. Some find drinking a cup of warm water first thing in the morning (with or without tea) helps to loosen things up, though making sure you are hydrated in general is very important. This can cause problems in the future if it goes on, or could be a symptom of other problems, so please do go see a doctor if this is not resolved by adding fibre to your diet.

Obviously you need more fibre in your diet, start eating bread again, or lots of fruit and vegetables.... pooing only once a week must be horrible.

If 7 days is not your normal, than you need to do something about it. Try fiber tablets but make sure you drink lots of water with them. Exercise too.
