i want to start feeding my dog some rice mixed with chicken maybe once a week to vary his diet a bit ( he is currently on dry dog food) but i am unsure of how much to give him at a time. also is white rice ok for dogs or does it have to be brown?

Unlike humans dogs do not need a variety in their diet. In fact switching foods can actually create health problems, allergies and so on.
Due to recent recalls, you should be already feeding a premium food such as: Canidae, Solid Gold, Wellness, Eagle Pack, Royal Canin, Flint River Ranch.
If your dog thives on its current food, with a shiny coat, clear ears, bright eyes, and happy alert demeanor, don't mess with a good thing.
If it ain't broke, don't fix it! :)
That being said, home cooked chicken and BROWN rice is excellent in certain situations. My dogs do not get it unless they have been ill; it is used more as a recuperating diet, usually after upset tummy episodes, until they can go back on their normal kibble. I give them a little more than of the kibble, due to the water content, for example my 15# guys who get 1/4 cup of dry kibble would get 1/3 cup chicken and rice
If you are thinking about home made dog food due to the recent recalls, any premium brand I mentioned above is wheat free.
White rice is OK but just that - it has very little nutritional value, brown is preferable but takes much longer to cook.

Yes white rice is OK, but brown is better as it has more fibre.

I don't know how big/what breed your dog is so it's a little hard to say how much to give! Basically, give the same quantity of chicken and rice per meal as you would his dog food!

Brown rice is better, but you need to talk to your vet to find out how much you will need to feed him.

it is very good to vary your dog's diet. i have also fed my dog whith whte rice so don't worry. you should give him about a half a bowl at a time :)
