I just made Tuna Salad today and used eggs.
I did think about all the eggs that have been boiled over this Easter Holiday.
I suggest using left over eggs for:
Deviled eggs.
Tuna Salad - uses 2 eggs per can tuna
Potato Salad - uses 4 eggs per 10 med sized potato's
Egg Salad

Egg salad or Deviled eggs are a couple things that can take up some of the extra eggs you will have on hand. also you can add the eggs to salads tuna salad and a number of other recipes.

EGGS MIMOSA :
6 hard boiled eggs
parsley
mayo
black olives
salt & pepper
Cut the hard boiled in half, take carefully the yokes off and
put them (except 2) in a bowl where you add the shredded parsley, salt, pepper &
a little of mayo.
Feel the egg whites with the mixture. Smash the other 2 yokes a little and
sprinkle the yokes on top of the eggs.
Decorate with a slice of black olive

Egg Salad sandwiches Just peel and chop eggs and mix with Mayonnaise and a little mustard..Or cold peeled eggs chopped in a salad, or one more make a white cream sauce, chop the peeled eggs and add to the sauce serve over toast or English muffins.

How about deviled eggs. You have the hard boiled easter eggs, you peel the sheel off and cut the eggs length wise. Scoop out the yolks and mash them. Adding papirika, salt, pepper, and whatever else you fancy. Mix it all together and then fill the eggs back up with the yolks.

Hello; This is a home recipe, brown some ground beef and sausage, when done, add flour to the oil and meat mixture. Add milk to make a gravy. When it thickens, dice eegs and put it in the gravy. Put over toast or biscuits. I call it eggs royal. It will be a hit.

deviled eggs, egg salad, pickled eggs. any recipe that calls for hard boiled eggs like potato salad, macaroni salad.
pickled eggs are very easy. beet juice , a tbsp or two of vinegar, onions diced and unshelled boiled eggs. let them sit in juice for about 2 hrs and you have pickled eggs

crumble them and put them through some muffin batter... better than choc chips because you get big goey patches of melted chocolate in the cooked muffin!
you could do the same with choc chip cookies, too.
