So, do creationists just kind of believe that god just made the earth all at once? I mean, literally 7 days?

No, there are variations....There are mainly 2 schools of thought - 1 : literal 7 days...And - 2 : "day-age" theory, where each day from Genesis represents a long indeterminate period of time......"7-day" could explain all inter-dependant relationships in nature, whilst the "day-age" leaves potential for evolution...

Actually 6; on the 7th day, God rested. There are variations. Some people say that Genesis 1:1 is not part of the first day. Some people put a day as a thousand years. Some people say it is allegorical. Most people who call themselves Creationists are strict 6 day Creationists.
