i just got a rice cooker and i was wondering if you can still substitute the water with chicken, beef or veggie broth? can you add things like onions and water chestnuts to cook with the rice?

Yes, you can. You can use any liquid.

If you add any vegetables, be sure to REDUCE the amount of liquid you add. When vegetables cook, it gives out moisture. Unless you reduce the amount of water, you will end up with waterly and soft rice.

I've never heard of adding water chesnuts, but in Japan, people do add regular (peeled) chesnuts for a special dish.

This is important. After the switch turns off and cooking light goes out, DO NOT OPEN THE LID for at least 15 minutes. When you open the lid, if you hear some sizzling or popping sound, you opened it too early. Close it as quickly as you can.

By the way, with rice cooker, add rice, liquid of your choice, mixed vegetables (frozon) and cook as usual. You can end up with a quick and nice pilaf!

Absolutely you can. Even better try putting frozen vegetables in it (with the lid slightly off to remove the steam as it builds) they cook perfectly in a rice cooker. Don't let too much steam out while cooking most of the steam does the cooking of the vegetables. Do not add water.

Absolutely ! makes for very tasty rice dishes. You can add other ingredients too.
