Tzaziki (used to dip cooked meat into)
4 cups plain yogurt, whole milk or low-fat
2 hothouse cucumbers, unpeeled and seeded
2 tablespoons plus 1 teaspoon kosher salt
1 cup sour cream
2 tablespoons champagne vinegar or white wine vinegar
1/4 cup freshly squeezed lemon juice (2 lemons)
2 tablespoons good olive oil
1 tablespoon minced garlic (2 cloves)
1 tablespoon minced fresh dill
1/4 teaspoon freshly ground black pepper
Place the yogurt in a cheesecloth-lined sieve and set it over a bowl. Grate the cucumber and toss it with 2 tablespoons salt; place it in another sieve and set it over another bowl. Place both bowls in the refrigerator for 3 to 4 hours so the yogurt and cucumber can drain.
Transfer the thickened yogurt to a large bowl. Squeeze as much liquid from the cucumbers as you can and add the cucumbers to the yogurt. Mix in the sour cream, vinegar, lemon juice, olive oil, garlic, dill, 1 teaspoon salt, and pepper. You can serve it immediately, but I prefer to allow the tzatziki to sit in the refrigerator for a few hours for the flavors to blend. (makes 5 cups)

4 garlic cloves
2 cups canned chickpeas, drained, liquid reserved
1 1/2 teaspoons kosher salt
1/3 cup tahini (sesame paste)
6 tablespoons freshly squeezed lemon juice (2 lemons)
2 tablespoons water or liquid from the chickpeas
8 dashes hot sauce
Turn on the food processor fitted with the steel blade and drop the garlic down the feed tube; process until it's minced. Add the rest of the ingredients to the food processor and process until the hummus is smoothly pureed. Taste, for seasoning, and serve chilled or at room temperature. Serve w/ pita bread or pita chips for dipping.

The quickest and easiest of all salads, this tomato and feta combination takes a few minutes, tastes wonderful, and adds an authentic Greek touch to any meal. If you don't have time or the ingredients for a full Greek salad, this is a great substitute.
INGREDIENTS:
1 large ripe tomato
1/4 cup of feta cheese, crumbled or chunks
pinch of oregano
pinch of pepper
extra virgin olive oil
PREPARATION:
Wash and core the tomato, and cut into bite-sized chunks. Put the feta on top, sprinkle with pepper and dried oregano. Pour olive oil over the top - more if you like to dip bread, less if not - and serve.
Note: If the tomato skin is tough, peel the tomato before making the salad.

Basic Greek Salad:
Cucumbers, Tomatoes, Olives with a little olive oil and some oregano to season...toss it all together.
This is classic. Americans have added to it by putting it on top of lettuce, adding peppers andonions and feta cheese. When you order a Greek Salad in Athens, Greece it will not have feta cheese on it.
You can also do tzatziki (tsad-zee-kee) is a cucumber yogurt dip you eat with raw veggies. Take a cucumber and grate it. Mix it with some plain yogurt and mint. Refrigerate and serve with veggies or pita crisps.

GREEK SALAD MY WAY :
Diced cucumber
diced tomatoes
feta
kalamata olive
sliced onions (optional)
spring mix
salt & pepper
Olive oil
balsamic vinegar
Put all the ingredients in a bowl and toss. Serve very cold
