The directions on the back of my easter egg dye kits says to use glass, enamel or stainless steel pot to boil the eggs in and NOT to use iron or aluminum. Can anyone tell me why?

The reason why is the chemical reaction by the vinegar you add to the water. it will stain your pot black and your eggs, too. It's very hard to scrub out, some impossible. Use stainless steel, it's non reactive.

More than likely yo have to use some vinegar- in the water and Aluminum and Iron will for a chemical reaction wish will not be good to consume the eggs

years ago pots and pans were made of only aluminum or cast iron(remember the cast iron frying pans?)
since that time we have learned that these metals soak through into certain foods
this of course is not good for your health
in light of these findings....we now use other metals to make our pots and pans
cheaper versions,unfortunately, are still using some of these metals
older people may also still have some of these pots around

The dyes will stain a metal pot. Aluminum is particularly susceptible. But if you don't mind a colored pot, go ahead.

because whatever you cook in iron or aluminium pans can end up with traces of iron or aluminium in them.....glass, enamel and stainless steel will not transfer any harmful element to your food. If you do not plan to eat them then you do not have to worry. Happy Easter.

I'm guessing the metals will alter the dying capabilities of the dyes, some sort of reaction with the vinegar you're using...kinda like them saying you shouldn't cook tomato sauce in them either....because of the acidity of the tomatoes

It probably has more to do with the egg shells not taking their brand of dye properly, rather that it being "poisonous" or something.
