turkey is so light that a simple garlic sauce would be very nice.
cut up some zucchini, squash, bell pepper, onion, tomato, carrot, snow pea or any combination thereof into bite sized pieces. drizzle with a little olive oil and place in a 450 degree oven for 25 minutes, turning often until tender.
meanwhile, combine olive oil, a couple tbsp of butter, minced garlic and shallots if you have them in a frying pan. turn on low heat and let the garlic soften. pour the sauce into a bowl and add meatballs to the warm pan. roast the meatballs until brown and carmelized. add veggies to pan and toss the meatballs and veggies in the garlic sauce.
enjoy!

These looked great when Paula Deen made them:

Shane's Sweet and Sour Meatballs

1 pound cooked and frozen meatballs, thawed
2 (8-ounce) cans pineapple chunks, drained, juice reserved
1/2 cup Dijon mustard
1 diced red or white onion
1/2 cup chopped green onion
6 cloves chopped garlic
Sweet and Sour Sauce, recipe follows
Coarse black pepper

Preheat oven to 350 degrees F.

In deep non-greased baking pan, add the thawed meatballs. Top the meatballs with the pineapple chunks. In a medium bowl add the mustard, red and green onion, and garlic. Mix well. Top the meatballs and pineapple with the mustard sauce. Add the Sweet and Sour Sauce and season with black pepper.

Bake for 30 minutes. Remove from the oven; add the remaining pineapple juice, stir to combine, and place back in the oven for the remaining 30 minutes. Serve while hot.

Sweet and Sour Sauce:
4 cups ketchup
1/4 cup water
2 tablespoons Worcestershire sauce
1 cup sugar
1/4 cup white vinegar
Black pepper (about 2 tablespoons)
2 tablespoons pineapple juice

In a saucepot, mix all ingredients together. Cook on high heat. Keep your eye on it. Do not walk away. Cook for 2 minutes and stir. After 3 to 4 minutes, take it off the heat and mix for 2 minutes. Use it same day or keep in the refrigerator for about 2 to 3 weeks at the maximum.

Or Swedish Meatballs
Pool Table Meatballs
Recipe courtesy Sandra Lee
1/4 cup vegetable oil
2 pounds frozen beef meatballs, thawed
2 tablespoons all-purpose flour
1 (14-ounce) can reduced-sodium beef broth
1 1/2 cups whole milk
1/4 cup sour cream
1 tablespoon Swedish meatball seasoning
2 tablespoons diced chives
Seasoning salt

Heat oil in a heavy large skillet over medium-high heat. Add meatballs and cook until brown, about 8 minutes. Using tongs, transfer meatballs to a bowl. Add flour to skillet and cook 1 minute over low heat, scraping up browned bits from bottom of skillet. Stir in broth, milk, sour cream, meatball seasoning, chives and seasoning salt, to taste, using a whisk.

Return meatballs to skillet. Simmer until liquid thickens enough to coat meatballs, about 5 minutes. Remove skillet from heat. Spoon sauce on top of meatballs and serve immediately.

How about meatball stroganoff? Make light brown sauce, simmer meatballs in it until done. Remove from heat. Stir in a pinch of nutmeg & fold in 1 cup sour cream. Serve over noodles.
