I have been using Franks for a while but wanted to change it up a bit and try something new. I was at Whole foods about a month ago and decided to try something by the name of "WING TIME". Its nice and thick and you can actually see some of the herbs floating around inside. Not watery looking like the others. Being from Whole Foods, it may be a little more expensive, but worth it. They have both Medium and Hot heat. Hope you have a chance to try it.You will like it.

Buffalo Wild Wings Hot Sauce:
1 cup Frank's cayenne pepper sauce
1/3 cup vegetable oil
1 tspoon sugar
1 1/2 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp Worcestershire sauce
1/8 tsp. fresh ground pepper
1egg yolk
2 tsps water
2 tsps cornstarch
Combine all ingrediants except egg yolk, water, adn cornstarch for the sauce in a small saucepan. Heat sauce over medium heat until boiling, then reduce heat and simmer for 5 minutes. Remove pan from heat and allow it to cool uncovered for 10 minutes. While the sauce cools, vigorously whisk egg yolk with 2 tsps water in a medium bowl for about 2 minutes or until the color is pale yellow. Whishk in cornstarch until dissolved. Drizzle the hot sauce mixture into the egg yolk mixture in a steady stream while rapidly whisking. This will create a thick, creamy emulsion that will prevent the oil from separating. Cover the sauce and chill until its needed.

I spent many years up in Buffalo, NY - the place where Buffalo wings were invented.
Anyway, the traditional sauce to use is Franks Louisiana Hot Sauce. That's the way they do it in Buffalo!

drizzle the hot sauce mixture into the egg yolk mixyure in a steady stream while rapidly whisking. this will create a thick creamy emulsion that will prevent the oil from seperating. cover and chill until needed.

1 bottle 8 oz crystals Louisiana hot sauce and 1 stick butter that's it . heat and wait till butter is melted then use as you would for your sauce ... Simple and Great .
