I'd love to have some good, new, tastey & unique recipies for brussel sprouts. Please help.

Buy the fresh ones, cut in half and try to separate the leaves as much as possible (it helps to remove the core)

Saute a bit of smoked ham, bacon, with onion and garlic then toss in the leaves and saute quickly till they just begin to 'wilt' but still have a bit of 'bite' to them

deglaze the pan with a small amount of chicken or veg stock and balsamic vinegar then pour over the dish

Caramelized Brussel Sprouts:

16 servings

10 cups small firm fresh Brussels sprouts (about 2 3/4 pound)
1/2 cup sugar
1/4 cup butter
1/4 cup red wine vinegar
1/4 cup balsamic vinegar
3/4 cup water
3/4 teaspoon salt

1. Prepare the brussel sprouts by peeling off 2 to 3 of the dark outer leaves; trim stem ends.
2. In a Dutch oven or 12" skillet heat the sugar over medium high heat until sugar begins to melt, shaking pan occasionally to heat sugar evenly.
3. Once sugar starts to melt, reduce heat and cook until sugar begins to turn brown.
4. Add butter; stir until melted.
5. Add the vinegars.
6. Cook and stir for 1 minute.
7. Add the water and salt.
8. Bring to boiling; add the sprouts.
9. Return to boiling; reduce heat.
10. Simmer, covered, for 6 minutes.
11. Uncover; cook about 15 minutes longer or until most of the liquid has been absorbed and the sprouts are coated with a golden glaze, stirring occasionally.
12. Keep warm until serving.

Brussel Sprouts with Bacon 1 pound brussel sprouts steamed 4 slices of bacon 1 shallot chopped Fry bacon until crisp drain on paper towels and set aside. Reserve a tablespoon of bacon drippings. Heat pan with reserved drippings and saute shallots for 2 -3 minutes, add steamed brussel sprouts cook and addtional minute. Serve with bacon crumbled on top.

Cook the brussel sprouts for 5 minutes, pour over a white sauce and sprinkle with cheese, place under the grill for 5 minutes to brown off , great taste.Serve with a Baked Potato.

Brussels Sprouts in Cheese Sauce

1 pound Brussels sprouts, trimmed
1 tablespoon fresh lemon juice
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 cup milk, warmed
1/4 cup shredded cheddar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
Pinch cayenne

Heat oven to 350 degrees F.
Place Brussels sprouts in saucepan with enough water to cover. Add juice. Simmer, uncovered, 8 to 10 minutes, until tender. Drain.

Meanwhile, melt butter in small saucepan. Stir in flour; cook 1 to 2 minutes. Gradually whisk in milk; cook, whisking, until sauce thickens, about 2 minutes. Stir in cheese, salt, pepper, nutmeg and cayenne.

Transfer Brussels sprouts to a 1-quart casserole. Pour sauce over top. Bake in for 20 minutes or until heated through.

They're great when smothered with onion sauce (basic bechamel sauce with sliced onions simmered until soft); also mixed with chestnuts although they might be difficult to get at this time of year. You could also use them instead of cabbage in bubble and squeak - this is an English dish and I don't know how well known it is in the US, but basically you mix left-over mashed potato with cabbage - or sprouts, same family - and butter, and then fry in a shallow pan until the bottom gets crisp, at which point you stir it up so the crisp bits get distributed and do it all over again until you have a crunchy confection that's great with bacon, left-over ham, or left-over almost anything - pauper's food, and none the worse for it.

One prep trick that nobody mentions - cut an "x" into the stem end with a sharp paring knife - it helps the sprout cook evenly. While they're steaming, crisp up a few slices of bacon and crumble, toss the sprouts with a LITTLE BIT of the bacon drippings and crumbled bacon. Mmmmmm!

Roast them.

1) wash & dry sprouts, remove any wilted leaves

2) drizzle w/ a little olive oil & season w/ salt & pepper

3) roast on a cookie sheet @ 350 degrees F for about 20-30 mins.

I spread mine out on a baking sheet. Drizzle them with some olive oil, and sprinkle with coarse salt. Roast them in a 400 degree oven for about 15-20 minutes. They get caramelized on the underside, and they are so yummy, I can eat them like candy!
