MEXICAN TACOS

1 lb. ground beef
1/2 onion, diced
1 jalapeno pepper, diced
1 (24 or 40 oz.) can of refried beans
1/2 jar of salsa
1 tsp. freshly ground cumin
1 tsp. freshly ground coriander
Corn or flour tortillas
Sour cream
Shredded lettuce
Diced tomatoes

Brown beef, onion and jalapeno pepper. Add refried beans, salsa and spices. Let simmer gently for 10 minutes, covered. Place a tortilla on top of mixture, spooning a little of the mix over it and cover for 60 seconds until tortilla softens. Remove the tortilla and fill with meat and bean mixture. Add sour cream, lettuce, tomato and more salsa to taste. Tastes even better 2 to 3 days later after flavors have mixed.

Im not really sure what kind of tacos you are talking about but if you are looking to fry them:
Mix 1 lb. of ground beef and 1 lb. of chorizo together and smash on half of a tortilla and fry in some oil.
Or for a healthier version, cook the ground beef in a pan and season it with maybe garlic, salt, and pepper and buy the already-made shells.

I have put out a 'taco bar' for friends during football season where I set out bowls of shredded lettuce or cabbage, chopped tomatoes, onions, green peppers, a selection of salsas, cheese, sour cream, possibly avocado slices or guacamole if in season, and then several types of shredded meat (chicken, beef, pork - even grilled shrimp or mahi) seasoned with cumin and chili powder

you can add jalapenos or hot pickled veggies if you like

Provide lots of warm tortillas and let people make their own
