i need to make teddy bear bread for easter morning. i was wondering if i can make the dough the night before. it has to rise in 2 cycles of 1 hour. how would i go about doing that?

Yes, you can do that. In fact, you'll end up with even better-tasting bread.

Let the dough rise for the first time, then (as already directed) punch it down to get most of the air out of it. Then, spray it lightly with non-stick spray (like PAM), and wrap it very thoroughly in plastic wrap, or put it into a zipper-top bag. If you use a zipper-bag, use one that will hold about twice as much dough as you're putting into it. Store it in the fridge, and remove it at least two hours before you plan to bake it.

Tomorrow morning, after the Egg Hunt, take the dough out of the fridge but leave the wrapping on. Let it come to room temperature for at least an hour...during that time, it will rise some, and "bloat" the wrapper or bag (that's what the oversize bag is for...during rising, the dough can pop the seal on the bag, if it's too small).

Then put the dough into a bowl, cover it, and let it rise (for the second time), and proceed as usual. The bread will have an even better flavor than if you'd just baked it straightaway, because the longer the yeast is allowed to work, the more flavor it gives the bread.

Put your dough into a plastic bag and make it as tight as you can with a lactic piece to secure it with.

Then take it out of the fridge about one hour and allow it to come to room temp before you allow it go start into its first cycle!
