I would :
Vinegar, like the British
crushed garlic (very thin) & paprika
garlic mayo

Lemon Aioli is yummy -
1/2 cup mayonnaise
1 lemon (2 tablespoons lemon juice and 1 teaspoon lemon zest chopped)
1 teaspoon Dijon mustard
1 teaspoon chopped garlic
Salt and pepper
Dash Tabasco
1/4 cup olive oil

Place all ingredients except the olive oil in the work bowl of the food processor. Process until smooth. While the machine is running, slowly add the oil, until all is incorporated. Season with Tabasco, salt, and pepper.

I also like plain ol Malt Vinegar, or Thousand Island Dressing.

This is actually a recipe for a remoulade. It's close to the one I like to get at my fav. restaraunt. They serve it with waffle fries and it's SUPER tasty!

SUN DRIED TOMATO BASIL DIP
12 servings
Preparation Time: 35 Minutes
INGREDIENTS
1/2 dried tomato halves, snipped into thin strips
1 carton (8 ounces) sour cream
1/2 cup mayonnaise
1 teaspoon finely chopped fresh basil
1 teaspoon finely chopped garlic
1/2 teaspoon lemon juice
1/4 teaspoon salt
1/4 teaspoon pepper

DIRECTIONS
1. Soak dried tomatoes in hot water until soft, about 10 minutes; drain.
2. In food processor bowl, process tomatoes until finely chopped. Transfer to bowl. Add all remaining ingredients; mix until blended.
3. Cover and refrigerate at least 1 hour to allow flavors to blend.
Serve with French-fried potatoes or roasted potato wedges

Why mess with a good thing? When those fries are piping hot, dust them with seasoned salt. Then combine ketchup and a splash or two of Tobasco. Voila!!!

The Canadians' claim to fame is pouton. Gravy on their fries, check it out. Slightly, strange at first but not too shabby.
