Oh yes! It's my favorite.
1 pkg. pistachio pudding mix
1 15 oz. can crushed pineapple (slightly drained)
1 container of Cool Whip
1 graham cracker crust
Put the pineapple in a bowl and sprinkle with the mix. Stir and let stand for 10 minutes. Fold in the Cool Whip, dump it in the crust, and pop it in the fridge.
Literally, easy as pie!

Here are two recipes...
Pistachio Pineapple pie
Makes: 8-12 servings
Ingredients
1 package Pistachio pudding
1 large 15 oz unsweetened crushed pineapple
1 cup small marshmallows
1/2 cup chopped nuts
1 large tub of Cool Whip
Crust
1/2 cup margarine or butter
1/4 cup brown sugar
1 cup flour
Directions
Prepare crust by combining the margarine, brown sugar, and flour. Bake at 400 degrees for 15 minutes. Stir occasionaly as it burns easily. Pat about 1/2 inch thick in a 9x12 pan. The remainder will be sprinkled on top of the pudding.
In a separate bowl combine the pudding, pineapple, marshmallows, and nuts. Fold in the tub of Cool Whip. Pour into the prepared pan and garnish with the remaining crust crumbs.

1 box instant pistachio pudding mix
1 can CRUSHED pineapple in syrup
1 tub frozen whipped topping
Dump pudding mix in large bowl. Dump in pineapple. Mix well. Fold in whipped topping. Refrigerate for a couple hours at least. To make larger quantities, increase each ingredient by equal units (3 pudding mixes, 3 cans pineapple, 3 tubs whipped topping feeds a whole lotta folks!).

Pistachio-Pineapple Pie
Ingredients:1 (4-serving) package JELL-O sugar-free instant pistachio pudding mix or the regular pistachio mix is fine as well as long as you're not a diabetic
2/3 cup Carnation Nonfat Dry Milk Powder
1 cup (one 8-ounce can) crushed pineapple, packed in fruit juice, undrained
1/2 cup water
1/2 cup Cool Whip Free or Reg. Cool Whip if not diabetic
1 (6-ounce) Keebler graham cracker piecrust
2 tablespoons purchased graham cracker crumbs or 2 (2 1/2-inch)Instructions:Using a wire whisk, mix together the dry pudding mix, dry milk powder, undrained pineapple, and water in a mixing bowl.
Blend in the Cool Whip Free/or reg.Cool Whip and then pour the pudding mixture into the piecrust.
Sprinkle the graham cracker crumbs over the top and refrigerate for at least 30 minutes.
Cut into 8 separate servings, and serve!
A yummy pie that is sure to get great reviews. Nutritional Information:Per Serving:
