VIVA LA FRITO PIE

1 (15 oz.) can chili, no beans
1 (15 oz.) can chili with beans
3/4 c. water
2/3 of a 12 oz. pkg. Fritos original
corn chips
1 c. chopped onion
3/4 lb. cheddar cheese, grated
1 (8 oz.) carton sour cream (opt.)

Preheat oven to 350 degrees. Spray 1 1/2 to 2 quart casserole with Pam. In saucepan, combine both cans of chili and water; heat to boiling, stirring occasionally. Place 1/2 of the corn chips in bottom of prepared casserole. Cover with half the chili mixture. Sprinkle with 1/2 cup onion and half the grated cheese. Repeat layers, ending with grated cheese. Bake for 25 minutes or until heated through. Serves 4 to 6. TIP: After wedges of pie are cut, top each with a tablespoon of sour cream. An excellent main course on a cold day.

I like the way they do it at the fair durring the summer heres my recipe take a big bag of frito chips put it in a baking dish then pour your taco meat over the top after it has been cooked . then take your lettuce put it over the top then your tomatos then your cheese beans and black olives optional of course then the salsa and you can never have too much sour cream after that take a spatula or a big spoon put it on a plate and enjoy hope this helps

I like to serve this as a do it yourself - that way everyone can add exactly what they like. First I make a batch of homemade chili in my crockpot. Then I make up a batch of my "rotel from hell" dip. Take 1 block Velveeta mild mexican & cut into cubes. Add 1 can rotel chilis & tomatos and a little salsa. Stir over low heat til melted, then keep warm til ready to serve. I take and set out small bowls of toppings such as chopped onion, diced tomatos, shredded lettuce, japalenos, guacamole & plenty of sour cream. In dish, layer fritos on bottom, then add chili & rotel cheese. Sprinkle with your favorite toppings & enjoy. Don't forget plenty of napkins!!
