Who are these people that think atheists and secularists are the flowers of Europe?

They are like yourself, those who insist upon defining society as sick and compartmentalized when in reality we are all just humans.

When we label people is atheists, or secularists who are actually only attempting to label what we don't understand. Your question was who are these people, the answer is whether we like it or not those people are us.

Everybody who could fought the Huns and the Muslims there, because the Muslims were invaders. The Christians were the organizing force, and they wrote the history.

How about Vlad the Impaler? He is a hero in Transylvania for pushing back the Moslem hordes. A good christian he had his POW's impaled by the thousands and left on poles to scare the crap out of his enemies. Now that is a flower of Europe.

Here's what I know... A roman general Aetius defeated an army of Huns and that caused a governmental breakdown within the Huns. They remained in minorities in the lands they had conquered.

the visigoths, (arian christians) and romans, (pagan, catholic) beat the huns,(pagan) at the battle of chalons.
the ostogoths, (arian christians) and gepids, (arian) defeated and destroyed the huns at the battle of neado.
the franks, (catholic) beat the arab/berbers, (muslim) at the battle of tours.
did you notice that all of these war mongering barbarians were theists. no atheist or secularists trying to invade or destroy.
overt and public atheism and secularism is a pretty recent thing because of persecution and discrimination by theists, who tended to do things like burn you, lock you up or destroy your career. i think if you look at the list of scientists, artists,writers and philosophers who now can for the most part openly proclaim their atheism, you will see that it seems very flowery in comparison to the list of theists.

Christians were being slaughtered by the established churches (Roman and Protestantism) They could not have been doing physical battle with the Huns and Muslims anywhere.

Atheism was a crime at the time of these events. To say "why didn't atheist help" is like saying why didn't the UN stop the 100 years war. They didn't exist.
