beef and veal question?

whene i search any calorie counter for beef i got 2 results that confuse me i got

1.Separable lean only

2.Separable Lean and fat
sowat is the diffrent between them and the fat percent of my meat i dont know exacly but is so low coz i got almost fat free broth whene boiling the meat?

when we buy beef around here from the store you have a percentage of fat content. using weight watchers makes it easier to calulate in the diet.
