Here is a good spinach and strawberry salad. Perfect for Easter!
2 bunches spinach, rinsed and torn into bite-size pieces
4 cups sliced strawberries
1/2 cup vegetable oil
1/4 cup white wine vinegar
1/2 cup white sugar
1/4 teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds
DIRECTIONS
In a large bowl, toss together the spinach and strawberries.
In a medium bowl, whisk together the oil, vinegar, sugar, paprika, sesame seeds, and poppy seeds. Pour over the spinach and strawberries, and toss to coat.
Note: You can also use mandrin orange segments or cranberries when strawberrries are not available., adding toasted sliced almonds or walnuts/pecans instead of sesame seeds.

Spinach Salad With Lemon Dressing (Serves 4)
4 slices bacon
4 cups torn spinach leaves
1 can (8 ounces) pineapple tidbits, drained, chilled
1/2 cup sliced purple onion
Lemon Dressing (below)
Fry bacon; drain and crumble. Place spinach in a large serving bowl. Top with pineapple tidbits and sliced purple onion. Sprinkle crumbled bacon over spinach. Just before serving, pour lemon dressing over salad and toss lightly.
Lemon Dressing
1 cup vegetable oil
3 tablespoons fresh lemon juice
1 teaspoon sugar
1 teaspoon salt
1 teaspoon paprika
1/4 cup finely chopped onion
1 teaspoon dry mustard
1 clove garlic, minced
Combine all ingredients in blender container; cover and blend thoroughly. Chill. Stir and pour over salad.
Makes about 1 1/2 cups.

Spinach Pasta Salad
8 ounces ziti (2-1/4 cups) or other small pasta
1 cup lightly packed spinach leaves
1/4 cup lightly packed basil leaves
2 cloves garlic, quartered
2 tablespoons finely shredded Parmesan cheese
1/8 teaspoon salt
1/8 teaspoon pepper
1 tablespoon olive oil
1 tablespoon water
1/2 cup light mayonnaise dressing or salad dressing
Spinach leaves
Radicchio leaves (optional)
1 to 2 ounces (3 to 6 tablespoons) chopped prosciutto or ham
2 tablespoons toasted pine nuts
Cook pasta according to package directions. Drain pasta, rinse with cold water, and drain again. Set aside.
Meanwhile, in a blender container or food processor bowl combine the 1 cup spinach, basil, garlic, cheese, salt, and pepper. Add oil and water; cover and blend or process until nearly smooth and mixture forms a paste, scraping down sides of container frequently. Combine the mayonnaise or salad dressing with the spinach mixture. Add to pasta and toss until well coated. Cover and chill for at least 4 hours or up to 24 hours.
To serve, line a salad bowl with spinach leaves and, if desired, radicchio leaves. Spoon salad into lined bowl. Sprinkle with chopped prosciutto and pine nuts. Makes 6 to 8 side-dish servings.

6 ounces dried cavatelli or penne pasta

1/3 cup bottled reduced-calorie Italian salad dressing

2 tablespoons sliced pitted ripe olives
6 cups torn fresh spinach
Cracked black pepper
Cook pasta according to package directions; drain. Rinse pasta with cold water; drain. In a large bowl, combine the pasta, tomatoes, feta cheese, salad dressing, green onions, and olives. Cover and chill in the refrigerator for at least 2 hours or up to 24 hours.
To serve, arrange spinach on a large serving platter; spoon pasta mixture over spinach. Sprinkle with cracked pepper. Makes 8 to 12 side-dish servings.

What you can do is you can take some lettuce and spinach and mix them together and add some veggies like tomatoes, carrots, onions, etc. Also, add some croutons, cheese, etc. Try a dressing to go with it. Like Ranch, Italian, Etc.

AHHHHH yummmyy..... Here is a recipie I got from the Food Network.... Take the tips of asparagus and lightly drizzle olive oil on them and then bundle in 6-9 with a strip of bacon and tie it in a knot. Bake them fopr 20minutes at 375 and the smells and taste is wonderful.....
