Well, I hear Niagra Falls is popular. I wouldn't call it "beachy" though. You might try somewhere in the Carolinas. Lots of beaches, a few islands not far off the coast too. Depending on the time of year you could also try somewhere in New England.
If you're not too concerned with how accurate the "in the States" part of your request is you might also want to look into the U.S. Virgin Islands or Puerto Rico. Both, being islands, have lots of beaches and are technically part of the States for all intents and purposes (i.e. no passports needed to enter or exit, same currency, English is spoken, etc.)

DON'T go to Gatlinburg. It's expensive and touristy.
But if you'd like to go to the Smoky Mountains, try the little town just across the mountains from Gatlinburg. Cherokee is a small town owned by the Cherokee Indians. Lots of cultural experiences, beautiful scenery, not very expensive. Close to the National Park. Try driving on the Blue Ridge Parkway.
Or--
Myrtle Beach. The ocean, touristy stuff, outlet mall shopping.
Or both--
that's what we did and had a great time.

Depends on what you're looking for. The Keys would be nice. We just got back from New Orleans and it is definately at the top of our list of favorite places in the US. It's not all about the french quarter. The first few nights we stayed in a mansion that was turned into a beautiful B&B (very romantic). The last few night we partied in the FQ.

why not the west? San Diego or if in the east, go to a cruise in the Bahamas, you can go to Miami and get a one day cruise, plus still enjoy the wonderful beaches of Florida. Destiny is a great place, by the way. Best luck!

I think Branson, Missouri is really fun. It is friendly, inexpensive and there is so much to do and see.
You don't mention a budget but that is a factor. When you are on a limited money trip it changes what you can do. If you are young, Walt Disney World is fun, if you are on a second marriage or just waited a while then visit Myrtle Beach, in NC.

I know you asked for the east or south, but way out west there's a little place called Maui. IT IS FANTASTIC!!!! It is truly a paradise. I never get tired of going there. There are so many things to see and do, unless you'll be inside...
