Easter Sunday is a date chosen by the Church. It's is the first Sunday after the first full moon after the Spring Equinox. The actual day of the week that Jesus left the tomb has been lost to man. The Crucifixion was at least 10 days after Passover, which moves in the modern calender, but not the Hebrew calender.

This year Passover is remembered on April 4th. At 6 PM Tuesday night, which begins Wednesday Our Lord was crucified on the cross.
He was put in the tomb before even the start of Thursday. This of course starts at 6 PM.
So we have it that Jesus Christ the Saviour entered the tomb just before sundown on Wednesday. Then starts Thursday.
Thursday night, Friday night, Saturday night, and Jesus Christ is risen early Sunday morning. The first day of the week.><>

It is all about the method of determining when the day begins. We use the Jewish custom of the day going from sundown to sundown. So on Thursday night at sundown began Friday. And Friday went to sundown. After sundown on Friday was Saturday. At sundown on Saturday, Sunday begins. Jesus rose in the night, because when the women went to the tomb before dawn on Sunday it was empty. So He rose sometime after sundown on our Saturday night, which is actually Sunday to the Jews. This is why the Orthodox, Roman Catholic and Anglicans have the Great Vigil of Easter after sundown on Saturday night as the first mass of Easter.

In technicality, yes, Monday would be the third day. But it doesn't mean 72 hours. Jesus died on Friday. That made Friday the first day of Christ's death. Saturday was the second day, and Sunday was the third day, on which he rose on Sunday morning. The third day.

Technically, it was on the "THIRD" day --- so counting from Good Friday that would be Easter Monday.

I guess the church celebrate it on Easter Sunday, simply because that is the day they (or at least "most of them") meet for services.

Happy Easter.
