These are quick, delicious and very pretty.
Mini cheese cakes
12 vanilla wafers
2 (8 ounce) packages cream cheese, softened
2 eggs
2 tablespoons lemon juice
2/3 cup white sugar
1 (21 ounce) can cherry pie filling
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Line muffin tins with 12 paper baking cups. Place a vanilla wafer in each one.
In a medium mixing bowl beat cream cheese until fluffy. Add eggs, lemon juice, and sugar. Beat until smooth and thoroughly combined.
Fill each baking cup 2/3 full with cream cheese mixture.
Bake in preheated oven for 15 to 17 minutes. Cool on a rack. Top with fruit pie filling. Pipe whipped cream or sweetened cream cheese into a rosette on top of each cheesecake just prior to serving, if desired.
Makes 12
Another idea, if you have the time, is to just buy some crispy chow mein noodles and a bag of chocolate chips.
Heat chips over double boiler until melted and stir in noodles. working quickly, put a heaping Tablespoon in muffin tins and form into 'nests'. Fill with jelly beans or other chocolate candy covered eggs.

Creamy Lemon Squares
20 'nilla wafers, crushed (I didn't have these so I substituted with 1 cup crushed graham crackers crumbs)
1/2 cup flour
1/4 cup firmly packed brown sugar
1/4 cup (1/2 stick) cold butter
1 8 oz. pkg. cream cheese, softened
1 cup sugar
2 eggs
2 Tbsp. flour
1 Tbsp. grated lemon rind
1/4 fresh lemon juice
1/4 tsp. baking powder
2 tsp. powdered sugar
Preheat Oven to 350 deg. Line a 8" cake pan with foil, with foil extending over the sides.
Combine first 3 ingredients in a bowl, cut in butter until mixture resembles coarse crumbs. Press into the bottom of the prepared pan and bake for 15 minutes. While crust is baking, combine cream cheese and sugar, beat until fluffy, add eggs, 2 tbsp flour, lemon peel and juice and baking powder. pour into prepared crust and bake 25-28 minutes or until center is set. Cool on counter. Sprinkle with confectioners sugar, cover and chill for at least 2 hours or overnight. I made these the other day and they are delicious, I plan on making one for our Easter Dinner and also one using orange zest and orange juice with a chocolate crust.

Make ice cream sundaes. Get some vanilla ice cream, different sauces, candies, whipped cream and vanilla wafers. Everyone will love it. For a special treat, buy a store bought pan of brownies and add that underneath. Relax and enjoy the holiday!

Make oreo fluff it is the best just type it into google or somethin and it might come up with the recipe if not i know it has like oreo pieces with whip cream but thats all i got srry

Banana pudding is soooo good. Buy 2 boxes of instant vanilla pudding, a box of vanilla wafers and about 6 banana's. Put a layer of wafers on the bottom of a 9x9 pan. then add your banana's and then a layer of your pudding. Keep layering it and then on the top add a layer of cool whip. And put it in the fridge for about 3 hours so the wafers will soften. Enjoy. It's very delicious.

fruit sorbet
whipped cream
berries
using tin cans, or large plastic cups, line them with saran plastic wrap. using a small glass, like a shot glass, cut circles out of the cake, place one cake circle in the bottom of the cup. squish some softened sorbet down onto it, then another circle of cake. repeat until cup is full, then freeze. when ready to serve, remove from the cup, take off the plastic wrap, invert, top with whipped cream and berries.....
love it...
thought of another one, this one is baked, and will taste like you spent hours...
a large can of fruit, either pie filling or plain fruit in juice or syrup, depending how sweet you like it, i love peaches..
add appropriate seasoning, like apples, add cinnamon and a bit of nutmeg, peaches, add a bit of nutmeg
take a box of cake mix, whatever flavor you like, sprinkle it over the fruit in a baking dish.
melt 1 stick butter, drizzle over the cake mix.
bake at 350 for about 45 min to 60 min..
serve hot with ice cream or whipped cream
yumm again...so simple, so good...

TRUST ME USE THIS ONE PEOPLE LOVE IT! Yellow Cake mix (let it cool a bit) on the top put vanilla pudding then a can of crushed pineapple, Top it with a layer of whip cream. simple and it is wonderful!

you can make a very good snickerdoodle cookie "cake." just type it under a yahoo or google search but instead of making a bunch of normal size cookies you need to put all the dough together and then you need to just decorateit and shape it like an egg. CUT AND ENJOY!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
