Vodka's always been my favorite to go in ginger ale, though you could also throw in some grenadine or lime along with it. Another possibility is Bailey's Irish cream & creme de menthe. (with or without the vodka) Sort of a grown up variation on an Italian soda.

you can mix a drink call
APPLEJACK HIGHBALL
3/4 0z orange juice
dash greenadine
11/4 0z calvados or applejack
and ginger ale
stir the first 3 ingredents over ice in a collins glass.
and fill with ginger ale .
BOURBON HIGHBALL
3 0z bourbon
ginger ale
sprial lemon twist
pour bourbon over ice cubes in a collins glass
with ginger ale.add the sprial lemon twist.
