nutritious soybeans. It is a complete source of protein--unlike other legumes, it needs no other grain to put with it to make it better for us. One block of tofu has only 200 calories. That is 12 oz of healthy protein for a mere 200 calories!! If you freeze the block, then unfreeze before cooking, it will take on a shredded chicken like texture. Yesterday for lunch, I tore up pieces of previously frozen (it was thawed) tofu, blotted it with a towel to absorb the excess water, rolled it in cornmeal mix(sprinkled a bit of paprika and seasonings into the cornmeal first) and pan fried it in olive oil till it was brown and crispy. It made wonderful faux chicken nuggets and my 2 year old GOBBLED it up. She ate it better than she did traditional nuggets! Every morning I blend half a block of tofu, 1 cup of soymilk and 1 cup of frozen fruit for a fantastic breakfast shake. I have found eating soy helps me not crave sugar and keeps me energized throughout the day. I cannot say enough good things about how soy and tofu in particular have helped my health. It is a chamelon food--you can blend it and put it in anything, and it does taste good if you give it a chance!

Unof is made by coagulating beans and pressing the results making curds. Although pre-made soy milk may be used, most tofu producers begin by making their own soy milk, which is produced by soaking, grinding, boiling, and straining dried (or, less commonly, fresh) soybeans.
Coagulation of the protein and oil (emulsion) suspended in the boiled soy milk is the most important step in the production of tofu. This process is accomplished with the aid of coagulants. Two types of coagulants (salts and acids) are used commercially.[2] The third type of coagulant, enzymes, is not yet used commercially but shows potential for producing both firm and "silken" tofu:

Soybeans, water, maybe some more ingredients. Simply said, tofu is bean curd. Technically, it's coagulated(curded) soymilk that's been pressed into blocks.

besides the nastiest substance known to man? It is bean curd that is supposed to be a very poor substitute for vegetarians for meat. Absolutely awful, but I think there may be an industrial use for it like car tires?
