I wouldn't over-season a good steak like a Porterhouse.
You basically only need the following ingredients:
Sea Salt (I recommend it over table salt, bc it has more full flavor)
Freshly ground black pepper
Garlic powder
Sugar

Add salt, pepper and garlic powder to each side of the steak. You can be liberal with how much to use because a lot of the seasoning may fall off during grilling. Make sure you pat all of these ingredients into the steak to ensure it stays in there. After both sides are completed, using your fingers, sprinkle a light layer of sugar (reg.white cane will do) over each side of steak, and also pat that in. The sugar won't affect the taste of your steak, but is just a component to give the steak a nice, browned outside, and is really optional.
I hope this was of help - Happy eating!

I do a rub for my steaks and let them sit for a few hours. Simple, but simply delicious:

1 T kosher salt
1 Tsp fresh ground pepper
1 T minced fresh garlic or 1 tsp powdered garlic
1 T Beau Monde seasoning.

Blend the above together and work into every surface of the meat. Cover and put in the refrigerator for several hours or overnight. Take the meat out about 30 minutes before you grill it so that it can come to room temperature. In addition to the rub, I also have used a basting sauce:

3 T red wine vinager
3 T catsup or tomato sauce
1 T soy sauce
2 T worcestershire sauce
1 tsp brown sugar
1/2 tsp red pepper flakes
1 cube butter
1 T chopped fresh rosemary
1/4 cup chopped fresh basil

Melt the butter and blend the above ingrediants. As soon as the meat has been seared, then baste with the above. Turn your meat only once during cooking process if possible.

I wouldn't ruin a good porterhouse steak with a lot of seasoning. The meat will taste good enough. I would just use some salt, pepper & garlic powder.

If its a good steak, a little salt is enough. If you cook in a skillet, put a teaspoon of oil in the pan before your start, a little more oil if it is bison. Cook to a little less than your preferred state of pink (it will continue to cook after being remove from the heat). Remove the steak to your plate and de-glaze the hot pan with an eighth cup of water. Pour the gravy over the steak immediately to help the steak recover its moist state.

If the steak seems a little tough, let it soak in tomato juice over night before cooking as described above.

Try this simply recipe I always use when I have a steak:

Season the steak with black pepper & rosemary. Add a good quality olive oil & rub the meat gently. Let it sit for 10-15 minutes or more. Off the grill you go! Add salt before serving. Enjoy!
