salmon dip - take 8 oz of cream cheese and warm to room temp. Blend in 3 or 4 oz of smoked salmon (or regular canned salmon, drained, with a touch of liquid smoke) and for real excitement add a couple of finely chopped chipolte peppers!

Spinach dip is another good one - once again take your 8 oz of cream cheese, warm it in a pot and add a package of frozen drained spinach, 1/2 cup salsa, cumin, garlic powder and onion powder to taste. Blend well, remove from heat and add 8 oz (or more) of mozzerela.

Serve either of the dips with good crakers or toast tips - can also be pre-spread. Expand the recipe to accomadate the number of people coming to the wedding

1.Get a large stryopone cylinder/cone at the craft store and cover it with plastic wrap. Take beautiful strawberries and with toothpicks secure them onto the cone. You will have an edible topiary. Beautiful! A couple of those and you're set.
2.You can also use the same idea with cherry tomatoes and baby mozerella balls all over the cones, putting parsley in between, if needed or even broccoli crowns.
3.Ham 'wheels' which are thin ham slices, wiped dry, covered in soft cream cheese and a thin sliver of a good dill pickle, roll it up and cut into pieces securing with tooth picks. Easy to do ahead, pretty with the pink, white and green.
4.Deviled eggs are always popular

mix canned salmon (drained) with cream cheese, dill ,a little garlic. spread on tortillas or flat bread and roll up. You can wrap them and chill for a few hours and then slice into pinwheels.
I'Ve also done the same thing with turkey and cheese slices (spread tortilla with a mayo-mustard combo), ham and cheese , and even roast beef with a horseradish/mayo spread. Just make sure the tortillas are not chilled before you roll them.
