Two reasons..
1. Most of atheist are born in chrsitian families, I mean they are born chrsitians
2. Atehism is a phenomenon basically against christian dogmatic belief or specifically reaction to trinity. Imagine a person is asked to believe three different independent god and yet you tell them that this is monotheism. So, they turn out to be atheist at the end.
Because of these two reason, when atheist justify their beliefs, they use chrsitianity as a reference point.

I've studied numerous religions. Judaism, Christianity, Islam, Hinduism, Wicca, Asatru, Hare Krishna, and some of the oriental traditions such as Buddhism, Taoism, and Shintoism.
I don't think they're all like Christianity -- I do believe they are all in error about the existence of the continuation of the 'self' in some way after death, and that those that hold to a deity are wrong about the existence thereof.
I do not reject all religions just because I reject Christianity. I reject religion based on logical consequences.

Why do you believe that all atheists believe that all religions are like Christianity?
I do believe that all religions, including Christianity, are created by man, based on fear of the unknown and a desire for power.
I have done plenty of homework on religion. Have you? (I mean this in an honest, not sarcastic way.)

Most christians don't even know anything about christianity. I've been reading questions from christians that thought that all other interpretations of the bible were not christian. Most christians also don't know about the relations between judaism, christianity and islam through their abrahamic roots.
And why should atheists know about this anyway? It's not our concern after all. Why should I study subjects that I reject as false mass-indoctrination and manipulation anyway.
I know enough about religion. I see how it works/they work, and it's not my muffin.

Have YOU done your homework ? There are many Christians who believe in young Earth theory, others who believe Dinosaurs walked with Man. While science ignores , and of course Atheists mock such nonsense, such beliefs are strongly held by many Christians. It is fair to say that the majority of Christians are embarrassed by such lunacy.

* There is no reason to believe in any religion, no matter how nice yours is

No, most religions are nothing like christianity. But I do see them equally insignificant, because I believe that there is no god. If your religion does not believe in a god or gods, then we can talk about life and all the wonderful things in it in all of it's splendid reality. We can talk about free will, because we realize that there is nothing that controls us but us and the limitations we set upon ourselves (nothing that can't be explained psychologically or scientifically, that is). Otherwise, we can't talk because I would not share your delusion.

I've learned about many different religions I personally don't know what yours is and therefore cannot say for sure if I've learned about yours- I just don't believe any of the ones I know about and I don't believe in god(s)

The atheists you are talking to likely did not. But, they tend to be the exception, not the rule. You should never base your opinion on an exception. It usually isn't the best representation for a group of people.
