Since chicken cordon bleu is rich, made with cheese and ham, I'd definitely go for a broccoli dish. Rice pilaf or wild rice in chicken broth would go well with both. I'd steer clear of the mashed potatoes and definitely the biscuits since there is so much breading with the chicken. Something apple for dessert, maybe apple crisp would top it off just right.
