Until it gets up and walks away.
If it hasn't sprouted yet or turned to mush or turned brown or moldy, it's just fine. Garlic is pretty obvious when it goes bad.

They do not keep forever they do keep for ages if you store them. Fresh garlic should be stored in a dry area not in a fridge....it tends to go moldy and starts to grow. Granules will keep so long as the packet is unopened. Powder the same. Tube of galic again will keep as long as the BBE date is up and also until it is opened. You can peel garlic and put it in a jar filled with olive oil and makes sure it is a very clean jar. Seal the lid and put in the fridge you can use the oil for flavouring salad dressing / cooking steaks etc and the garlic cloves stay nice in the oil. If the garlic smells strong without being broken apart, or feels soggy to the touch or is easily dented when you press on it then throw it out. It has gone bad. The clove should be firm like a hard onion to the touch...the skin should crack when you try to break the whole garlic apart and the flesh should be near white not brown or golden.
TIPS FOR STORING YOUR FRESH GARLIC
KEEP IT IN THE DARK
The key to keeping your garlic fresh is to keep it in an dark environment where the temperature does not fluctuate radically and the garlic has adequate air circulation. A colander or mesh bag full of garlic kept in a little-used cupboard or cold cellar is an ideal situation. Humidity should be around 71 per cent.
When you are removing garlic for use be sure that the remaining bulbs are not exposed to light at any time as this will trip the bulb into growth, thereby lessening the length of time it will stay fresh. Also, radical changes in temperature will also trip the bulb into growth.
Storing your whole bulbs of garlic in the refrigerator is not recommended. However, if you wish to store some garlic in the refrigerator, an effective and most convenient way of doing this is to break apart the bulb, peel each clove and then store them in a covered container (we just use plastic wrap). The cloves seem to stay firm for several weeks and you have the convenience of having a supply of prepared cloves ready for use when you need them.
YOU CAN FREEZE IT?!?
chop all the garlic and put in little plastic tubs and freeze it! When you need garlic, just fork it out of the bin (with ease). It is just like fresh and it will keep longer than 6 months

Fresh garlic will spoil inside the skin. When you try to peel it it will just be dust and smell funky....
Check out the Garlic Garlic that Tastefully Simple has. It is the best! All natural and yummy! I use it in everything. It is dehydrated garlic. You can make a garlic dip, use it on pizza, put it in soups, pasta, steak..... Then you don't have to fuss with the press.
Good luck to you!

If you are talking about fresh garlic (not powder) it keeps for a long time. to see if it's still usable, peel a piece to check to see if it's shriveled. If so, toss it. Also if it is not shriveled but it has started to sprout green roots, it's on it's last leg, use what you need, then toss it and get a new one.
