Why are you so concerned with fiber today. If you need to eat more fiber, find a web site that list fiber rich foods and stop pondering why one food has more than another.

If you are missing potatoes, but want the fiber, try this recipe.
Green Chili
Take 2 cups dried pinto or other beans, cook with water until done. Set aside.
In another skillet, put a little oil, some chopped onion, garlic and diced celery. Cook until tender. Add 1 cup sliced mushrooms, then 2 large, peeled, cubed, potatoes.
Cook until the potatoes are done, adding water as necessary. Add the beans to the veg mixture, stir in a 6.5 oz can of green chili, heat through, and serve.
Can be made in a crockpot.
Delicious with hearty bread.

Because beans natually contain lots of fiber, potatoes don't.

Potatos and beans are like comparing apples and oranges. One is a protein (beans) one isn't (potato). Potatos have more starch.
