We have it growing wild on our property and I have been gathering recipes. Almost all of them call for 1 or 2 "bunches" of watercress. Can you give me an idea how much that might be in cups (minus the hard stems, etc.)?

usually a bunch of watercress is judged by the diameter of all the stems gathered together and that would be about 3" - what that would be in cups I don't know .. I would hazard a guess that the leaves would be about 1 1/2 cups ...

just get some handfulls

like what fits in your hands

thats a bunch

the stems are ok too, just put oil and garlic in a wok

heat it, cook for like 2 minutes

then some lemon juice if you have it

If the herb is not already in a bunch (meaning tied up) then the best answer is a handful.
