how about creme horns, they aren't exactly cakes but they are awesome!
Creme Horn Shell
Ingredients:
1 package Thawed Puff Pastry Sheets
Egg Wash (as needed)
1 oz. Coarse Decorative Sugar (any variety)
Directions:
Be sure the package of puff pastry is fully thawed, but still cold. Working on a clean flat surface sprinkled with flour, place one sheet of the dough on the board and lightly flour both sides. Roll the sheet of dough slightly to ensure it is flat and even.
Cut Using a (rolling) pizza cutter, cut evenly into six long strips.
Wrap Wrap the strips of dough onto the Cream Horn Tubes. Over lap the dough slightly as it spirals down the tube. Press firmly onto the balking paper so the loose end is under the shell.
Garnish Brush down the center of the shell with egg wash - using a brush. Lift from the baking paper and evenly dip the top into the Decorative Sugar. Replace to the pan for baking.
Bake Bake in a preheated 375°(F) oven for about 20 minutes. Carefully remove the tube so the interior can bake. Continue baking another 10 minutes or until they become crispy and brown.
Variations: Shell can be made ahead of time and stored in a dry place.
Creme Filling:
8 oz. heavy whipping cream
2 oz. powdered sugar
1 tsp. vanilla extract
Directions
Mix ingredients together. Store - chilled in a covered container until needed. Before whipping cream, it is best to chill the mixing bowl, preferrably in the freezer. Using a wire whip and a fast speed, whip until stiff and firm.
Use whipped cream as soon as possible after whipping. Refrigerate any unused amounts, which can be re-whipped with the addition of fresh whipping cream.
Fill each pastry to the top and enjoy!
Or
1 large box instant pudding (any flavor)
1 1/2 cup milk
8 oz. whipped topping
Mix all ingredients together and stuff into the pastry.

Hello:
Since Easter is right around the corner,how about baking a nice Carrot Cake?? I like the kind of carrot cake that has carrots and nuts in it with a cream cheese frosting,YUMMY!! ;-) You could also bake a,"Bunny Cake,"which is basically a white cake mix that you bake in two round pans,and then you cut one of the cakes into a bow tie and ears,and use the other round cake for the bunny's face!! ;-) I also love chocolate cake with chocolate frosting,with chocolate chips on top,YUMMY!! ;-) Have a safe and Happy Easter!! ;-)

No bake chocolate oatmeal cookies.
combine 2 cups sugar, 1/4 cup of cocoa and mix together then cook on med high with 1/2 cup milk let boil for 3 minutes then add 3 cups oatmeal, 1/2 cup peanut butter, 1 tsp vanilla drop onto wax paper or foil let sit for about an 30 minutes..... the easiest most wonderful dessert. you can add more or less of the cocoa and peanut butter depending on what you like

Puff Pastry cake
the layers are made of Shu Pastry-same pastry recipe for making Cream Puffs-make two disks of the mix then layer in-between with Vanilla pudding and whipping cream-garnish with caramel or melted chocolate
