Sweat some diced celery, onion, and green pepper in a little oil. Then stir in some flour to make a roux. Add the pan drippings from your ham, bring to a simmer and season with salt, pepper, cajun seasonings, you can adjust the thickness or amount with chicken stock, or ham/pork stock.

Take the droppings (grease) from the pan you cooked your ham in and put it into a skillet. mix in some cornstarch and flour. let it turn brown on the stove, add water and more corn starch to thicken, salt and pepper to taste.
