The recipe already contains oil (either in the mix or you'll be adding it), so the addition of more oil on the pan could either make the recipe not set up as it bakes, or make it excessively greasy.

Either way, if the recipe/instructions say NO grease, then don't do it.

If you're still concerned, cook your recipe on either tin foil or parchment paper.

It means that there is plenty of butter/oil in the recipe, and if you grease the pan, they will run all over instead of rising properly. They usually spread a little anyway. For a softer bar, bake a min less than called for.

The reason why is simple, there is butter and or oil in the ingredients, they will naturally grease the pan. If you grease the pan, you will through off the whole balance of ingredients.

Well if it already has a lot of oil or margarine or crisco in it, then it shouldn't stick...maybe they think it will get too greasy? Or that the white flour pan dusting will detract from the looks of the cookie bars?

It probably has enough grease in it to keep it from sticking. Greasing the pan could give you a crust which you don't want.

more than likely there is enough fat in the recipe that it will keep the bars from sticking. if you are worried about it put in a piece of parchment paper and bake.

no it will not stick because there is so much butter or oil in the bars that it is enough grease.

Sugars in the recipe will crystallize and harden to make a non-stick crust

Usually that means, that the dough has so much butter (or fat) in it that it doesn't need added butter to the pan.

no you put oil in to the mix and it should not but you don't want to fry them with too much oil
